Job Summary – (Role Summary)
Under the direction of the Chief Stewarding and the Executive Chef or delegate, and within the limits of established Inter Continental Hotels Group Policies and Procedures, oversees and directs all aspects of the Stewarding operation.
Key Relationships
- Liaise with the Kitchen Team to ensure accurate and clean equipment is ready for service
- Liaise with the Purchasing Manager and suppliers for any purchase needed for the stewarding operation.
- Liaise with the Engineering Team to schedule preventive maintenance and repairs
- Liaises with members of the Accounting Team to determine appropriate inventories and regular stock takes.
- Establishes and maintains effective employee and inter-departmental working relationships
- Intercats with indeveduals outside the hotel including but not limited to lients, Suppliers, Compititors and other member of the hotel Community.
Essential Duties and Responsibilities – (Key Activities)
- Provide functional assistance and direction and be responsible for the smooth running of the whole stewarding operation.
- Supervise the duties of all stewarding department employees, facilities, operation and costs.
- Supervise the sanitation, cleanliness, hygiene as well as the quality level of product and services.
- Check more specifically the proper use of chemicals and washing accessories.
- Coordinate with the Stewarding Manager in establishing minimum and maximum operating par stocks and supplies and approve storeroom requisition.
- Co-ordinate with the Assistant Food & Beverage Manager or Outlet Manager to check their requirements for the day and the next day.
- Maintain health inspection record, attendance record and file on casual employees.
- Take all necessary actions to reduce the loss of silverware / flatware.
- Operate in a safe and environmentally friendly way to protect guests’ and employees’ health and safety, as well as protect and conserve the environment.
- Comply with the hotel environmental, health and safety policies and procedures.
- Oversee all functions of the Stewarding operation to achieve the optimum quality level of sanitation.
- Determines the minimum and maximum stocks and controls the par-stocks of all material and equipment.
- Monitors local competitors and compare their operation with your own operation.
- Keeps aware of trends, systems, practices and equipment in food and beverage through trade literature, hotel show and site visits.
REQUIRED QUALIFICATIONS
Education –
Diploma Bachelor’s Degree in a relevant field of work or an equivalent combination of education and work related experience.
Experience –
+8 years progressive experience in Steward operations 3+ in supervisor or Assistant managerial level. Demonstrated experience in successfully owning or managing medium to large scale projects, programs or initiatives.
