Job Description
- Work with the Event Director in doing a forecast of the day to day production, establishing production processes, and developing contingency plans.
- Plan and execute food tests until the approval from the approving stakeholders is achieved.
- Set production objectives and implement action plans for achieving set targets.
- Ensure alignment with the quality and safety standards, statutory regulations, contractual obligations, and budgetary controls.
- Collaborate with the Head of Operations in conducting a training for the front service crew that will familiarize them with the product labels and packaging.
- Establish a core production team and create work shifts to ensure round-the-clock food production operations.
- Communicate closely with the Purchasing and Logistic departments for maintaining inventory of raw materials and processed food products, and ensuring that such are stored properly at optimum conditions.
- Train the production team on the production procedures and standards, contingency plans, and work procedures.
- Coordinate with the QHSE department for the conduct of training on sanitary, quality and food safety standards.
- Ensure that all equipment and tools are in place so as not to disrupt the production in both kitchen production unit and venue production area.
- Manage coordination between the kitchen production and logistics to ensure timely delivery.
- Monitor through the production coordinators the food stock levels in each concession and launch the back-up plans in case of potential shortage or excess.
- Monitor every aspect of production to ensure compliance with established procedures and standards and production time frames without compromising quality.
- Implement all applicable food safety and HACCP standards and maintain the highest level of sanitation, cleanliness and safety throughout the food production processes and areas at all times.
- Monitor through the feedback from operations the fast and slow moving items in order to adjust the production targets.
- Collect operational feedback on customer satisfaction or dissatisfaction on the food items in order to do quick improvements if necessary.
- Ensure that food wastage is documented, left over processed food are discarded properly, and left over raw materials are re-stored according to food safety standards.
The Successful Applicant
- A minimum experience of 15 years of production management for fast-paced, concessions and food service operations.
- Leadership skill in order to direct, coordinate and control the activities of food production to ensure maximum efficiency.
- Time-management skill to achieve production targets within set time frame.
- Decision-making skill to take quick key production decisions.
