Job Purpose

Maximize member & guest satisfaction and food and beverage profitability by managing the restaurant, Tentola, events and its staff

Job Responsibilities

  • Book Functions at all venues as seen fit in accordance with the Club bye-laws and staff coverage
  • Develop Social Calendar for members throughout the year, encompassing but not limited to Theme Nights, Club Nights, Quiz Nights, Cruiser and Dinghy events etc.
  • Implement and review of Service Standards
  • Recruit, maintain and train the front of house full time staff members including but not limited to, rostering, disciplinary and HR related issues, team building, cross training and performance management comprising of biannual appraisals
  • Implement procedures for bill and tab handling, cash handling, POS usage, opening and closing duties, stock handling and requisition, work orders, bill payments and accounts
  • Work closely with Beverage suppliers and managing the current contracts so as to obtain the best benefits and support for the Club
  • Oversee all Health and Safety Standards in the department
  • Liaise with the General Manager, Executive Chef, Restaurant Supervisors on all aspects of functions inclusive of costing, logistical issues, and staffing
  • Collect relevant data to develop annual strategic plan. Develop an annual Departmental Budget and assure proper implementation of the Budget
  • Department P&L management
  • Maintain beverage cost as per budget
  • Promote F&B activities through social media channels and direct marketing
  • Hold weekly Staff meetings and daily briefings
  • Operate within all guidelines, policies, standards, and constraints as established by the Club and ownership, and implement the Club’s minimum standards as they relate to each area within the Club
  • Monitor customer satisfaction and respond to customer feedback and complaints
  • Perform related duties as directed by the General Manager

Qualifications/Skills

  • 4-5 years’ experience working in a supervisory role within the F&B department of a similar sized establishment College Diploma or Equivalent in a hospitality related field
  • Must have a full and comprehensive working knowledge of all areas within the Food and Beverage Division
  • Must be able to manage a brigade comprised of 22 service personnel
  • Knowledge of event planning and supervision
  • Knowledge of all systems to include
  • AV Committed to delivering high levels of customer service
  • Flexibility to respond to a range of different work situations
  • Willingness to develop team members
  • Highly Organized Able to work under pressure and changing criteria.
  • Excellent interpersonal skills, working equally well with members, guests, staff and management.
